This fish recipe is healthy and SO easy to make. I like to keep my recipes simple and easy and this one falls right into that category! The below serves two people.
Ingredients:
-2 Pieces of White Fish (I used cod)
-10 Cherry tomatoes cut in half
– Dill
-4 TBSP Olive Oil
-2 Lemons
-Capers
-Salt and Pepper
1- Preheat the oven to 400° and pat cod filets with a paper towel until dry. Season all over with salt and pepper.
2- Combine olive oil, cherry tomatoes, one full squeezed lemon, dill and capers in a baking dish. Toss to coat and spread into an even layer. Nestle cod pieces into baking dish.
3-Bake until fish is opaque and flakes easily with a fork, 15 to 20 minutes, depending on thickness of filets.
4-Serve garnished with lemon slices, dill and the sauce from the baking dish.
